Apple Crisp

Serves 4

Use this all-purpose topping for other fruits such as pears, peaches, berries or rhubarb. Dried cherries or cranberries make a flavorful addition, you can sprinkle the dried fruit inside the crips if you so desire.

Filling:

4 large apples
2 tablespoons maple syrup
1 tablespoon fresh lemon juice
1 tablespoon all-purpose flour (optional)
1 teaspoon cinnamon

Topping:

_ cup (1 oz./30g) walnuts
2 tablespoons maple syrup
2 tablespoons whole wheat flour
1 tablespoon butter
2 tablespoons dark brown sugar
2 cups (12 oz/350 g) low-fat granola
2 teaspoons ground cinnamon
1 egg white

Directions:

1. Preheat the oven to 375 o F (190 o C). To make the filling, peel and core the apples and cut into diced pieces. Toss the apple pieces with lemon juice, cinnamon and flour, if using. Spread the mixture evenly in 4 individual ramekins or in a shallow gratin dish.
2. To make the topping, combine the nuts, flour, brown sugar, and cinnamon in a food processor and pulse briefly. Add the maple syrup and butter and pulse until grainy. Add the granola and process briefly. Add the egg white, a little at a time, until mixture starts to clump. Do not let the mixture get too wet or it will turn soggy.
3. Using your hands, spread the topping over the apples. Bake 15 minutes or until the apples are simmering and the topping is brown and crisp. Cool slightly before serving.
