Spicy Indonesian Marinade for Shrimp or Chicken Breast

Serves 5

Ingredients:

1 cup (8fl oz/250 ml) lite coconut milk
1 cup (2 _ oz/ 75 g) chopped cilantro
2 tablespoons fructose
1 tablespoon curry powder
1 tablespoon fresh lime juice
1 serrano or jalapeno pepper, seeded and chopped
1 clove garlic, chopped
1 teaspoon grated fresh ginger
1 teaspoon tumeric
1 teaspoon canola oil

1 lb of either chicken breast or shrimp

Directions:

1. Combine all the ingredients in a blender except oil. Blend until smooth. Pour into a bowl, add oil and mix well.
2. Pour marinade into a bowl and coat your chicken breast or shrimp. If using chicken breast, pre-slice the chicken breast into bite size pieces
3. Refrigerate marinated shrimp or chicken for 1 to 2 hours.
4. To cook, grill or broil for 10-15 minutes until shrimp or chicken is cooked through.
