Mashed Yukon Gold Potatoes

Serves 4

Ingredients:

4 large Yukon Gold potatoes, peeled and cut into large dice
1 cup (8 fl oz/250 ml) skim milk or low-fat buttermilk
1 teaspoon salt
1 teaspoon white pepper

Directions:

1. Place the potatoes in a saucepan and cover with cold water. Bring the water to a boil and cook the potatoes until soft.
2. Simmer the milk in a saucepan.
3. Run potatoes through a food mill or mash with a potato masher, add the hot milk and , with a whisk or wooden spoon, mix well until the potatoes are creamy and smooth. Add more milk for desired consistency.
4. Season with salt and white pepper.
